Mechanism Analysis of the Antioxidant Activities of Hesperidin and Its Derivatives

Abstract:

Th e antioxidant mechanism of hesperidin and its derivatives was discussed bv means of the Complete Neglect of Differential Overlap(CNDO).The results indicate that,for 4 antioxidants,namelv,hesperidin.dios-min,methylhesperidin and hesperidin chalcone.their antioxidant activities mainly result from the complexation of a flavonoid with metal ions and are not due to the effect of deoxidization. Moreover.neohesperidin dihydrochalcone was found to be a good antioxidant with excellent complexation effect and deoxidization ability. The complexation of hesperidin with Fe” was finally testified by experiment
