Dilatational Properties of Soy 11 S Globulin Adsorption Films on Air-Water Interface

Abstract:

The variation of surface dilatational characteristic parameters with adsorption time for soy 11 S globulin adsorption films on air-water interface was measured by the axisymmetfic drop-shape analysis,aft a function of pro-tein concentration and pH value in the bulk phase.The results indicate that,with the increase of adsorption time,the surface dilatational modulus increases,while the phase angle decreases.Moreover,the dilatational elasticity of the soy 11 S globulin films adsorbed on air-water interface is greater than the dilatational viscosity.Thus,in view of rheology,the viscoelastic adsorption films are practically elastic.In addition,the surface dilatational modulus increases with the bulk protein concentration,especially depends on the pH value
